Cooler Nights

    Now that cooler nights have set in, our menus change along with the season. The cool  fresh mozzarella and tomato salad  has been replaced with a nice hearty dish, and Trotta’s pasta works great with these seasonal dishes. Try our delicious wide egg noodles as a bed for a hearty stew, our black pepper pasta underneath some Beef Stroganoff or add our tortellini to your chicken soup and make it a one dish meal. There are so many choices, and with Trotta’s pasta they’re all GOOD!

Pumpkin or Butternut Squash Ravioli

Everyone loves the idea of Pumpkin or Butternut Ravioli, but I’m always asked, “what’s a good way to serve them?” In Mario Batali’s “the BABBO cookbook” there is a simple recipe that works great. This sauce recipe is enough for one box of Our ravioli.

While the ravioli are cooking, melt 1 stick (8oz.) of butter in a 12″-14″ sauce pan, until it foams and subsides. Add 2-4 Tbsp of the pasta cooking water to the butter and whisk to emulsify. Drain the pasta and add to the butter. Add 6-8 leaves of fresh Sage and gently toss over low heat for 1min. to coat the ravioli. Plate the ravioli, grate Parmigiano-Reggiano and a Amaretto cookie over each plate and serve immediately.


First Week of Fall

With the change of the season, our eating habits also change. We are finishing  up those last summer tomatoes and eggplants, enjoying as much as we can and finding ways to preserve summer for a winter day.

  The cooler weather brings changes to our kitchen as well, the fruits of summer are being replaced by  the taste of fall.  At Trotta’s , We are right on track. We have been busy roasting up the first pick of Pumpkins and Butternut Squash and have stocked Our shelves with these delicious Ravioli. We have also been busy with Our soups, bring back all the favorites like  Pasta & Fagioli and some new ones like Corn Chowder with Bacon. Stop by the retail store or pick some up at the Markets and let Us know what you think.     ED

Trotta’s New Website

I would like to welcome everyone to our brand new website. I hope you find it informative. You will find that our services are quite extensive — much more than you might think after just a quick visit to our Retail Store or Farmers Market.

However, this website did not just appear on its own. There are some people that need to be thanked. The first would have to be long time friend, Kathy O’Keole, who really put the idea in my head and tried very hard to initially put this together. To Julie Olson-Rachlin of Bolddogge Interactive, who actually put this all together, thank you for your patience. To Carlos Bernard of Sir Speedy, thank you for your persistence.
